Yema Cake

Ingredients:

For the Cake Batter:

 

For the Meringue:

 

For Yema Frosting:

 

Procedures:

1. Mix the ingredients (cake flour, baking powder, and salt) in a mixing bowl and then sift.

2. In a separate mixing bowl, mix the sugar, egg yolk, milk, and lemon essence

3. Beat the mixed ingredients under low spee or whisk manually until you reach a smooth consistency

4. Combine the wet mixture and dry mixture together until everything is blended well.

5. Create Meringue on a separate bowl. Mix the egg whites and cream of tar,

then gradually add sugar and continue beating until it reaches a stiff consistency but make sure it's not dry.

6. Combine the meringue and flour mixture, and add vegetable oil slowly then fold using a spatula.

7. Grease the pan and then pour the combined cake mixture

8. Preheat the oven at 347 degrees F and bake the cake for about 40 minutes

 

For Yema or Milk Custard Frosting:

1. Get a shallow pan and then combine the condensed milk, egg yolks and evaporated milk

2. Slowly cook the mixture under a low fire and then continue stirring until it raches a thick consistency.

 

Decorating the Cake:

Yema cake is well known to have layers.

To achieve this, cut the cake into half horizontally

and then carefully place frosting at the top of the lower half layer

and then place the upper half of the cake.

Cover the entire cake with the yema frosting, topped with grated cheese.
